April 30th - National Oatmeal Cookie Day
Hi friend,
Can we take a moment to appreciate oatmeal cookies? Chewy. Comforting. A little bit wholesome. And if you add chocolate? Absolute perfection. 😍
April 30th is National Oatmeal Cookie Day, and I couldn’t let it pass without sharing a few of my coziest cookie recipes with you—straight from my kitchen to yours. Whether you’re in the mood for melty chocolate chips, something a little fruity and indulgent, or a simple pantry-friendly bake, there’s a cookie here waiting to make your day just a little sweeter.
🍓🍫 White Chocolate Raspberry Oatmeal Cookies
If you’re in the mood for something a little special, these are pure magic. Sweet, creamy white chocolate meets bright, slightly tart raspberries—and together with the oats, they create the most beautiful balance. They feel a little fancy, a little unexpected… and completely irresistible.
These are everything a good oatmeal cookie should be—soft, thick, and packed with melty chocolate chips. Honestly? I love baking chocolate chip cookies (always have!), but this oatmeal version has become my new favorite. My colleagues, friends, and family all keep asking for more—and I can't wait to bake another batch soon!
Soft, cinnamon-kissed, and perfectly sweet—these cookies are ideal when you’re out of brown sugar but still craving something cozy. I originally baked them for Christmas, but they’ve become an all-year favorite in our house.
So, if you needed a little nudge to bake something this week… this is it. 🍪
Whip up a batch, pour yourself a cup of coffee (or tea), and let’s raise a cookie to National Oatmeal Cookie Day!
Sending warm cookie-scented hugs, ❤️
XoXo Nora
